Caring for your Cake
All wedding cakes are baked on our premises and
delivered fresh to you on the day or shortly before the wedding.
On the day of your wedding, please ensure that the cakes, once cut
are keep under optimal conditions. All cakes, despite what anyone
says, deteriorate once exposed to the air. Ideally, cut cake should
be wrapped in cellophane or grease proof paper to prevent it
from drying out. Under most circumstances it is the responsibility
of the caterer to care for your cake at the wedding event. Please
ensure that the caterer agrees to this prior to the event. Under no
circumstances be tempted to refrigerate the cake for later
consumption.
Our uncut rich fruit wedding cakes mature with age and improve in
quality provided they are kept under the correct conditions. Because
they have a high sugar content and are infused with alcohol (Brandy,
Whisky, or Rum) they are well preserved. Typically, our rich fruit
cakes will remain edible for anything from 6 months up to a year and
maybe beyond. Your wedding cake could be used for a celebration in
the year following your wedding. To ensure that you rich fruit cake
remains edible please adhere to the following instructions: store
the cake in an air tight container; keep the cake between 16 - 22˚C ;
do not under any circumstances store the cake in a refrigerator, do
not expose the cake to direct sunlight and try to keep it in dark
conditions.
Our uncut sponge cakes are made from high quality ingredients and,
unlike many shop bought sponge cakes, contain no artificial
preservatives, colouring or flavouring which are used to increase the shelf
life and maintain the visual appearance of mass produced cakes. Sponge cakes do not mature with age
and are best consumed on the day of the wedding or shortly
afterwards. Cut sponge cakes are particularly vulnerable if
left uncovered in hot, dry venues or cold venues, and may even, in
extreme circumstances, show signs of degradation on the day of the
wedding.
Please ensure that your wedding cake is cared for both before and
after the wedding. If you follow these instruction you will to sure
to enjoy our delicious cakes.
Dairy Products and Gluten
Our standard wedding cakes contain
dairy products in the form of butter and eggs. Our royal icing
contains dried egg white. The flour we use for our standard cakes is
not gluten free. However, as we bake and decorate all our own cakes
we can provide products suitable for both vegetarians and people
with food allergies. Colin our chief cake maker is himself a
vegetarian and has a number of food allergies so fully empathises
with such clients.
Nuts and Non-edible Products
Please be aware that whilst your chosen cake may not be made with
nuts or a nut product, it will be prepared in a kitchen where nut
products may be used in other cakes and fillings. For example,
marzipan contains ground almonds and almond oil.
Some of the items on
your cake might be made from flower paste,
we recommend that these are not eaten as they may contain high concentrations of colourings
which, whilst edible, may under rare circumstances cause an allergic
reaction. The decorations may also
contain wires, jewels and other non-edible products.
It is your caterer’s responsibility to ensure that these non-edible
products are removed before serving the cake to yourself or your
guests. The general rule is, therefore, don't eat the flowers on the
wedding cake.
Alternatively, we can provide a fully edible cake that is not so
highly decorated or coloured (please ask when ordering your cake
that you require fully edible).
